Two slices of olive were a nice garnish—a burst of salt with a decent Hollandaise. The dish was an exercise in melding flavors, but as a result nothing stood out.

The frères were clearly confident enough in their preparation that the eggs were served alone with no potatoes. Unfortunately the potatoes were sorely missed.

The table bread and marmalade were tasty, but the baked muffin was distracting. Excellent orange juice, thick and egg-yellow.
